Wine production/Vinification

The wine is produced at the vineyards in accordance with traditional methods. Le Clos des Sources vineyards is an independent cellar equipped with the latest production equipment.

LIRAC ROUGE

Type of soil
The plots are located on slopping hills that take advantage of a carbonate-clay soil with pebbles.

Vine varieties
Grenache 50%, syrah 25%, mourvèdre 25%

Wine making and growth of wine
The harvesting is performed manually and grapes carefully selected “before and after destemming”.
Cold pre-fermentation and long fermentation of skins with immersed pomace. The juice is turned into wine in thermoregulated pyramid-shaped vats made of concrete, which keep the pomace cap completely immersed.
One year growth : 60% in classic barrels and “demi-muids” (600 liters barrels) and 40% in rough concrete vats.

Typical features
This wine is distinctive due to its well-located terroir and the age of the vineyard (with an average of 40 years).
It is characterized by red and black fruits as well as strong hints of spices.
Opaque ruby purple color,
Spices and liquorice on the nose.
Intense at first, subtle tannins, aromatic ending on the palate.

Storage
To be consumed within 3-8 years.

LIRAC ROSÉ

Type of soil
The plots are located on slopping hills and take advantage of a carbonate-clay soil with pebbles.

Vine varieties
Grenache 50%, syrah 25%, cinsault 25%

Wine making and growth of wine
The harvesting is performed manually and grapes are strictly selected “before and after destemming”.
Cold prefermentation, the global production of rosé wine is a mix of two techniques : bleeding the vats and direct pressing.
The fermentation processes at 15°C maximum in an inox thermoregulated vat.

Typical features
It is a crisp wine that can accompany a wide range of dishes, with as much finesse as a red wine.
Intense purple color,
Red fruit with slightly roasted hints on the nose.
Fully bodied and acidic with a good character on the palate.

Storage
Consume within 2 - 3 years.

CÔTE DU RHÔNE BLANC

Type of soil
The plots are located on slopping hills that take advantage of a carbonate-clay soil with pebbles.

Vine varieties
Grenache blanc 55%, bourboulin 45%.

Wine making and growth of wine
The harvesting is performed manually, allowing a strict selection of grapes.
Pellicular prefermentation in a closed pneumatic press. Cold maceration – 14°C maximum – 50% in barrels and 50% in inox thermoregulated vats.
Ageing in barrels for 6 to 8 month “depending on the discretion of the winemaker”.

Typical features
The mineral flavor of this wine makes it more intense and strong. It would nicely accompany aperitifs and shellfish or grilled fish for diner.
Pale yellow color,
White and dried fruits with hints of honey flavours on the nose,
Well balanced, fresh and mineral notes on the palate.

Storage
Consume within 1 - 4 years.
